BASIC COFFEE CONCENTRATE

Sometimes recipes will call for
Coffee Concentrate, a convenient way to use
coffee as a flavor enhancer.

Coffee concentrate is best if brewed in an espresso machine, but if you don’t have one, any coffee machine will do.
For reliably good results you need to use your machine to about 2/3rds of its capacity. This will make quite a bit of coffee concentrate, but you could share it with a friend or freeze it in ice cube trays for easy storage—
enjoy it in iced coffee.

***Use 6 Tablespoons of a finely ground dark roast coffee
To 6 ounces of water

Brew the concentrate and allow to cool;
then freeze in ice cube trays

Remember: Coffee concentrate is a food flavoring enhancer, not meant to drink by itself.

 


CAFÉ AU LAIT

6 ounces milk
2 frozen cubes coffee concentrate

Heat milk almost to a boil. Add coffee concentrate cubes and stir until melted. Sweeten to taste and
Pour into your favorite mug.

 


RICH COFFEE FUDGE SAUCE

2 squares of semi-sweet chocolate
(or 2 ounces—1/3 cup semi-sweet chocolate chips)
¾ cup café au lait
1 cup miniature marshmallows
1 tsp. Vanilla

Melt chocolate over low heat. Add café au lait and stir until well blended. Add marshmallows and stir until dissolved; add vanilla, serve over your favorite ice cream or ??
